Thankful for veggies!
I know its been 2 weeks since Thanksgiving here in Canada- but better late than never, right!
I am thankful for the many things I am blessed with and truly believe that showing gratitude daily helps to attract positive things into your life. I feel so fortunate that I have such an abundant variety of organic and local produce available to me, and also that I can afford to buy it. With that said, I do prioritize food when it comes to my expenses and think it is very important to spend your money on real whole foods. If you put in the time to make food from scratch, eating organic can be more affordable than conventional grocery shopping for the standard American diet.
A Vegan Sushi Feast!
The first time I ever had sushi I was probably around 10 years old at a neighbourhood garden party, it was homemade and I thought it was such an interesting concept. When I was 13 I tried it at again at a friends moms dinner party, and because I liked it so much they told me how easy it was to make. I went home asking my dad if we could make sushi, so he went out and got the crucial ingredients; sticky rice and nori (seaweed wraps), an assortment of things to go in it plus printed off a recipe from the library (this was back in 1998 and I only knew 2 people with home internet). “Cleaning out the fridge” Soup
I will begin this post by saying that this is NOT a recipe!! The whole point of “Cleaning out the fridge” soup is that you are using the things you need to get rid of in your fridge! For my lifestyle of eating raw-til-4/ vegan it is imperative that I grocery shop at least once a week and I am constantly rotating and prepping fruits and veggies to save them from perishing. Every week before I shop I also like to try and finish all last weeks not-so-fresh produce to make room for lively new fruit and veggies- and a soup is almost always the best way to do it!
Messages and Inspiration
It is impossible to deny that the universe works in amazing ways. My mind gets blown just thinking about how complex life on Earth is and how everything can somehow coexist symbiotically. Outside of what is proven in science and what exists in the physical world, there is just so much unknown that is waiting to be discovered. I stumbled upon the unknown when I ventured within and found out that once you crack into your true self there is no more hiding from who you are or who you want to be. It is scary at first but it can open up some beautiful things.
When I got to the point of reaching the path to self discovery I started having many “coincidences” in my day to day interactions. I cannot even begin to explain just how crazy some of these situations were and I will have to save them for another time, but it was around this point in my journey that I connected with my spiritual side and an open mind then allowed things in my life rearranging without force. Veggie Steamers
This is such a filling and versatile vegetable dish. I make variations of it all the time with different carbs, veggies and sauce. I normally make it over rice but it is also good on quinoa, lentils or even potatoes. I made mine with brown rice this time, so before I did anything I started the rice.
The next step is to prep your veggies by washing them, cutting them into bit sized pieces and placing them in a steaming basket that can fit inside or on top of a covered pot of water. I have a stacking bamboo steamer that sits on top my big soup pot.
This time for veggies I used:
- 1 medium summer squash
- 2 small carrots
- 1 small zucchini
- 1 small red pepper
- 2 handfuls of green beans
